Industrial Chic Meets Coffee Craft at GRAPH One Nimman
The exterior of GRAPH One Nimman is an Instagram magnet. The large stencilled windows and doorway are framed with weathered steel, giving the facade a trendy, industrial vibe. The lower portion of each protruding frame cleverly doubles as a window seat, attracting a steady stream of passers-by who stop for the obligatory photo opportunity.
Step inside, and you’re greeted by a cosy, dimly lit space that exudes the vibe of a late-night jazz or cocktail bar. At the centre is the counter and barista workspace where the brewing magic happens. Typically, you’ll find three or four of GRAPH’s highly skilled baristas busy crafting drinks here throughout the day.
On each side, grey cushioned seating against exposed grey brick walls creates a warm and inviting atmosphere. Complimented with rich brown wooden table tops and further grey upholstered chairs, the space beckons you to sit, relax, and soak in the dreamy ambiance. Bare bulb pendant lights hanging low over the tables further set the moody industrial feel. Grab a window seat for some natural light and watch the world go by outside in One Nimman. Or for those who want to get closer to the coffee action, there’s a slow bar with comfy seats at the back of the barista work area.
Enhancing the loft vibe, there’s a steel caged suspended floor over the counter, creatively used for storing supplies. Additionally, a typed paper-chain installation, fed from an antique typewriter mounted on the rear wall, forms a unique and imaginative artwork, adorning both the wall and ceiling.
From Nitro to Monochrome: Discover GRAPH’s Signature Menu
GRAPH boasts an extensive coffee menu, offering everything from nitro to slow-drip brews, complete with detailed tasting notes and coffee information. Their unique selection of signature drinks is arguably the most diverse of any cafe in Chiang Mai. Highlights include their GRAPH No. 17, featuring Nitro Cold Brew with tomato and lime, and GRAPH No. 16 (Boy with Girlfriend), a refreshing mix of fresh lime, brown sugar, craft soda, and espresso. For something indulgent, try the WOODLAND, a rich blend of cocoa, banana, milk, orange, and dried banana. The visually striking MONOCHROME, with activated charcoal, vanilla, and milk, is another must-try.

Wot no WiFi?
Unusually for a coffee shop in Chiang Mai, GRAPH One Nimman doesn’t provide WiFi—perhaps to discourage laptop users from overstaying their welcome. After all, this place is all about the coffee. And, given the warm and cosy environment, it would be very tempting to set up camp for the day!
